I need the Sindarin translation of "Palace of a Thousand Windows" or just "Thousand Windows".
I know Menegroth means "thousand caves" and Henneth Annun is the "window on the west", so I thought it might be something like Menhenneth or Meneghenneth. Unfortunately, I don't know which element in Menegroth means "thousand," nor do I know how Sindarin consonant clusters work - is "gh" even a possible combination.
I'm going to go with Menhenneth for now, but if anyone knows, post or email me!

And, teaching the man to fish...the Hiswelókë Dictionary Project. This site also has a downloadable PDF version of the dictionary. Très helpful, I've found.

Is there a Sindarin course online? I found and went through the Quenya one on Ardalambion, but well, it's kind of odd to have all the Elves in my stories speaking Quenya all the time when Sindarin would've been their mother tongue.

As far as I know there is no complete Sindarin Course. You might try the Tôl Gannel site: a fun site which includes a few lessons of Sindarin tutorial at: http://site.voila.fr/tol_gannel/index.html
It is fairly well grounded in Tolkien’s Sindarin, though there are a few differences.

I recommend “Summary of the Sindarin grammar,” “Sindarin Pronouns - a reconstruction” and “Dictionary of the Reconstructed Sindarin Words” all by Ryszard Derdzinski. These articles are based on Helge’s work and summarize it. I find the charts and lists quite helpful and refer to them often.
I recommend (as previous posters have noted) the download version of Hiswelókë's terrific Sindarin dictionary

and the Dragon Flame download also. It is an excellent program that puts the interactive Sindarin dictionary, complete corpus and a list of neo-Sindarin words on your computer. It is very easy to use. I use both extensively.
